Sweet Potato Pie

Prep Time 20 minutes
Cook Time 50 minutes

Ingredients

  • 1 and 1/4 cups sweet potatoes cooked and mashed
  • 3/4 cup sugar
  • 1/2 cup packed brown sugar
  • 3/4 cup canned evaporated milk
  • 2 large eggs at room temperature
  • 6 Tablespoons butter or margarine softened
  • 1 small box French Vanilla instant pudding dry mix
  • 9 inch pie shell unbaked

Instructions

  1. Preheat oven to 450 degrees.
  2. Microwave potatoes for 6-10 minutes until a fork can be inserted gently through middle of potato.
  3. Remove skins from sweet potatoes.
  4. In a large bowl combine first seven ingredients and mix until well blended.
  5. Spread evenly into unbaked pie shell.
  6. Bake at 450 degrees for 10 minutes and then reduce temp to 350 degrees.
  7. Bake for an additional 40 minutes until set.
