Crockpot Cuban Chicken and Beans

I have always loved a good Cuban meal. I love Cuban sandwiches, Mojo Chicken, black beans and rice, and of course plantains! A few years ago, I tried to come up with an easy way to have this delicious food in our home, without having to cook all day! Viola! I came up with Crockpot Cuban Chicken and Beans.  

This easy dish combines the flavors of Cuba with the ease of a crockpot. This dish is so simple, so versatile, so healthy, and you can eat it several different ways.

2 lb. chicken breasts (boneless, skinless)

1/2 red bell pepper, chopped

1/2 orange bell pepper, chopped

2 cans black beans, drained and rinsed  (I like the low sodium)

1 can pinto (or white or cannelloni) beans, drained and rinsed (I like the low sodium)

1 cup Mojo Marinade (about 1/2 a bottle) 

Tortillas for serving

      *TIP: use the other half (of the bottle) to marinate chicken breast and/or pork tenderloin and grill for another tasty dinner!!

Directions:

Place chicken in crockpot.

Do no stir.Crockpot, cuban, chicken, and beansSet crockpot to High for 6 hours or Low for 8 hours. Stir at the halfway point (if you are not home, don’t worry about this step.

When cooking is complete, shred chicken in the crockpot using two forks.

This dish is so versatile and can be enjoyed so many ways! I always like to top it with a little cilantro and Greek yogurt (or sour cream), plus a squeeze of lime. Use as a filling for corn tortillas or try it these other ways:Crockpot, cuban, chicken, and beansServe over rice.Crockpot, cuban, chicken, and beansIn a bowl by itself, with extra tomatoes (or salsa).

This is one of my families favorite recipes and it is so easy and delicious. You will love how your house smells with the aroma of these flavors.
