If you are from the south, I know for sure you religiously grew up eating chicken and rice. If you’re a Northerner, Midwesterner, or from the West Coast, please accept my apologies in advance for not really knowing if this dish was a go to for your family! It’s so simple and one that adorns every church cookbook, so I’m pretty sure it’s not just a southern staple, but one that our whole country can identify with! If not, this crockpot chicken and yellow rice that I threw together is my attempt to do just that! Fred’s mama makes the most delicious chicken and yellow rice and it is one of our favorite meals. Knox has grown up eating Nana’s “yellow rice” and it has become the one thing he will eat besides pizza! Her rice is made from scratch, and takes some work slaving over the stove, so when I was working full-time, I decided to take a short cut using Zatarain’s.
Their rice is so flavorful and easy to prepare, making it perfect for someone who doesn’t cook very often, is stretched for time, or just looking for an easy alternative to the typical southern chicken and rice!
Just throw a few chicken breasts into the crockpot, add in one cream of mushroom soup and one cup of sour cream and you have a meal ready in a few short hours! Feel free to substitute the cream of mushroom with chicken if you are not a mushroom fan, as it will come out great! You can even switch back and forth for a change and add in some mushrooms or a block of cream cheese! This recipe is very forgiving and one you just can’t mess up!
For the rice, simply follow the package directions thirty minutes before you want to eat and dinner is served! I am still partial to Nana’s scratch rice, and make it for Knox using white rice and chicken broth, but will save that special recipe for another post coming soon! In the meantime, Zatarain’s has a special place in our home (and pantry)!
This dish is all about simplicity for an easy weeknight meal, but you can also add in the few extra steps to confidently serve company. This is a hearty meal, so it doesn’t need many side items other than a healthy vegetable, like something green to give all the yellow some color! Steam up some broccoli spears, open up a can of peas or season some green beans and you have an easy, savory and hearty dinner.

Crockpot Southern Chicken and Rice
Ingredients
- 1 lb. chicken breasts boneless
- 1 cup sour cream
- 1 can Cream of Mushroom or Chicken Soup
- 1 block cream cheese optional
- 1 box Zatarain's Yellow Rice
Instructions

Add chicken, sour cream, soup and cream cheese if using to crockpot. Cook on low for 6-8 hours or on high for 3-4. Cook rice according to package directions. Shred chicken and mix with rice.
