Crockpot Pumpkin Chicken Chili

Ingredients

  • 1 lb. chicken tenderloins or breasts
  • One 15 ounce canned pure pumpkin
  • 1 can black beans not drained
  • 1 can Original Hot or Chipotle Rotel, not drained
  • 2 1/2 cups chicken broth
  • 1 small butternut squash cubed
  • 1 small yellow onion diced
  • 1/2 teaspoon pumpkin pie spice
  • 1 Tablespoon cumin
  • 1 Tablespoon chili powder
  • 1 Tablespoon minced garlic
  • 1 teaspoon onion powder
  • 1 teaspoon salt

Instructions

  1. Add all ingredients to crockpot. Cook on low 6-8 hours or high 3-4 hours. Shred chicken with a fork to break up if needed.

Optional garnishes: thinly sliced jalapeƱos, green onions, parsley, avocado, purple onion, white cheddar cheese
