Crock-Pot Express BBQ Cheeseburger Meatloaf

  • 1 lb. lean ground beef
  • 1 egg lightly beaten
  • 1 cup BBQ sauce divided
  • 1/2 package bacon 4-6 slices, cooked and crumbled
  • 1 cup shredded cheddar cheese mild or sharp
  • 1/2 cup Panko or seasoned bread crumbs
  • 1/2 cup green bell pepper chopped (optional)
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper


  1. Cook bacon according to package directions and crumble
  2. Using your hands gently mix and fold in together the following ingredients: ground beef, egg, 1 cup BBQ sauce, cooked bacon, cheese, bread crumbs, onion, salt and pepper until well combined
  3. Shape mixture into a rectangular loaf and insert into a mini loaf pan that fits in your pot or shape in round circle and place in a foil boat
  4. Insert trivet to bottom of pot
  5. Add one cup beef stock OR water to pot
  6. Place loaf in inner pot
  7. Set valve to sealing
  8. Press Meat and set time for 30 minutes
  9. Do a quick release and carefully remove as loaf pan or foil boat will be hot
  10. Top with layer of BBQ sauce
  11. Let rest for 5 minutes before serving
  12. Optional: Remove from loaf pan and broil in oven for 2-3 minutes for a crispy top on a foil lined baking tray

For a gluten free version make sure to use gluten free bread crumbs and bbq sauce
