Crockpot Slow Cooker Lasagna

Ingredients

  • 1 lb. lean ground beef
  • 1 16 oz casing hot breakfast sausage
  • 1/2 package pepperoni chopped
  • 1 medium onion diced
  • 15 oz Ricotta cheese
  • 1 6 oz cottage cheese
  • 1 package mozzarella slices thin sliced
  • 1 cup Parmesan cheese grated
  • 1 egg beaten
  • 2 jars marinara sauce
  • 1 box lasagna noodles
  • 1 teaspoon Italian seasoning
  • 1 teaspoon minced garlic
  • 1/2 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Cook onion on stove top until translucent.
  2. Add ground beef, breakfast sausage and cook until browned.
  3. Season with garlic, salt, pepper, sugar and Italian seasoning.
  4. While meat is browning cut up pepperonis.
  5. Add pepperonis to meat mixture and drain.
  6. In mixing bowl, beat one egg and combineĀ cottage cheese, ricotta and 1/2 cup Parmesan cheese.
  7. Spray crockpot with a non-stick spray.
  8. Evenly spread one layer of meat sauce on the bottom of the crockpot.
  9. Add a layer of noodles.
  10. Add layer of sliced mozzarella.
  11. Spread cheese mixture on top of mozzarella.
  12. Add another layer of meat sauce, lasagna, mozzarella slices and repeat until you are out of ingredients.
  13. Add some additional pasta sauce if you so desire.
  14. Top with the remaining 1/2 cup parmesan cheese.
  15. Cook on high 4-6 hours or low 6-8 hours.
