The other day, I was in Trader Joe’s grabbing a few essentials. That store gets me every time! I walk in for two things and leave with two bags full of things I didn’t even know I needed! This particular day they were sampling a Mexican Chicken Soup and it was DELICIOUS!
It was so good and seemed so easy to make that I had to try it when I got home. So, I did and let me tell you it was awesome. I added a few extra ingredients to up the nutrition value of it, and am so excited to share it with you!
Prep Time: 10 min
Serves: 4
Ingredients:
4 cups chicken broth
1 can of chicken (I know I was skeptical too, but it tastes the same…think of it like tuna! LOL. Also, check the label. The one from Trader Joe’s just has chicken, chicken broth, and a little salt).
1 can of corn
1 green bell, cut in chunks
6 ounces salsa (I like a more mild, salsa verde, but whatever your favorite salsa is will work great!)
1 avocado
Cilantro (optional for garnish)
Directions:
Place a pot on the stove
Put all ingredients in the pot
Bring to a boil, then let it simmer for 7 minutes
Cut avocado and divide among serving bowls
Ladle soup over avocado
Top with Cilantro
Enjoy, while pretending you are in Mexico on a white sandy beach, with the ocean rolling in the background, and the warm sun beating down….ahhhhhhhhhhhh. Are we there yet?!
As much as I love a good soup, I am so ready for some summertime fun! I am super happy the groundhog did not see his shadow! YAY!
