Low carb diets are all the rage right now and this Keto and Low Carb Friendly Make Your Own Pizza is one to try!

If you follow me on Instagram, than you know I am working hard to achieve some fitness goals. I have always wanted to see what my body is capable of, and am trying to see what that looks like not just physically but also mentally.

I still love my pizza and Mexican food, and I don’t believe in depriving ourselves. There are times when you just splurge and eat the real thing. However, if you think you can’t enjoy your favorite foods, because you are trying to avoid that delicious bread that’s calling your name when it’s not a a cheat meal…think again!

My best friend and I are always looking for low carb, easy recipes that even the kids will eat. We all know what a struggle that can be! Pizza is a staple for everyone, and even when it’s bad for you it can now be good!

This Keto and Low Carb friendly pizza crust actually tastes better than anything you could order from a chain, and you can customize the toppings yourself! Trust me, this crust will curb carb heavy cravings in a second! 

It may take extra work to cook and prep your own foods, but that’s what it takes to reach the goals. I have been on an ever lasting roller coaster relationship with food and am striving to end it. Just as Ecclesiastes states there is a time for everything…even the times to eat well and then splurge! LOL. As I say time and time again, all in moderation!

Keto and Low Carb Friendly Pizza

Course Main Course

Ingredients

  • 1 1/2 cup

    Mozzarella cheese (shredded)

  • 2

    tbsp

    Cream cheese

    (cut into cubes)

  • 2

     Large Eggs

    (beaten)

  • 1/3 cup

    Coconut flour

Instructions

  1. Preheat the oven to 425 degrees F (218 degrees C). Line a baking sheet or pizza pan with parchment paper.

  2. Combine the shredded mozzarella and cubed cream cheese in a large bowl. Microwave for 90 seconds, stirring halfway through. Stir again at the end until well incorporated.

  3. Stir in the beaten eggs and coconut flour. Knead with your hands until a dough forms. If the dough becomes hard before fully mixed, you can microwave for 10-15 seconds to soften it.

  4. Spread the dough onto the lined baking pan to 1/4" or 1/3" thickness, using your hands or a rolling pin over a piece of parchment (the rolling pin works better if you have one). Use a toothpick or fork to poke lots of holes throughout the crust to prevent bubbling.

  5. Bake for 6 minutes. Poke more holes in any places where you see bubbles forming. Bake for 3-7 more minutes, until golden brown.

  6. Remove from the oven and add sugar free pizza sauce, mozzarella, and whatever toppings you like (I used pepperoni, salami, garlic, onions, and jalapeños).

  7. Bake for approximately 5 minutes or until cheese is melted.
