Happy Hump Day Empresses and Emperors! We are finally to mid-week and we are headed to the beach in t-minus two days! Whoooo hoooo! With Easter being right around the corner, most of us will be fine dining at some of the most posh restaurants or clubs, or if you are like my family, spending the afternoon at home with a big spread that includes dishes like our favorite Hash Brown Casserole.
I have done both in the past, but I really love watching the kids run around the backyard of the house that my sissy and I grew up in, enjoying the comfort food like Hash Brown Casserole, that brings back nostalgic
memories of being at my Grandmothers’ houses in Tennessee with extended families, always spending this sacred holiday together as a family.
I’m sharing one of our favorite holiday dishes that can serve as a breakfast casserole, side dish or throw in some chicken to make it a main dish. It is hearty, sinful and oh, so divine and it will definitely become a family favorite that you begin to serve time and time again. Layer remaining cup of cheese on top.
Bake at 350° for 45 minutes to one hour, until bubbly and the edges are browning.

Hashbrown Casserole
Ingredients
- 1 30 oz bag frozen shredded hash browns
- 1/2 package bacon I always use Center Cut
- 1 16 oz carton sour cream
- 1 can cream of chicken soup
- 1/2 onion chopped (*TIP – I buy the pre-chopped onions in the refrigerated produce section!)
- 1 8 ounce bag sharp cheddar cheese, shredded and divided
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions

Preheat oven to 350°.

Cook bacon in microwave one minute per slice.

Set aside and let cool.

While bacon is cooking, lightly butter or spray a 9x13 casserole dish.

Place frozen hash browns in casserole dish and generously season with the salt and pepper.

In large mixing bowl, combine onion, sour cream, cream of chicken and 1 cup cheese.

Once bacon has cooled crumble into the bowl and mix well (you can also substitute browned sausage for the bacon, which I do often).

Pour over seasoned hash browns.

Sprinkle remaining cheese on top.

Bake at 350 for 45 minutes.
