Recently I was at one of my family’s favorite restaurants Mellow Mushroom. I usually have my “cheat meal” here and get pizza, but during lunch one day I was craving a salad. They have a mash up of my two favorite salads: a Greek and a Caesar! I love it so much that I recreated at home. It is super simple and delicious and is perfect for lunch or dinner. It is my Greaser Salad: A Greek and Caesar mash-up. : )
Ingredients:
2-3 Hand-fulls Romaine Lettuce (I have also used spinach)
4 oz Chicken, sliced (or 1/2 large chicken breast) I like mine grilled, however you could could also slice and sauté in a pan or even use rotisserie.
7 Grape Tomatos, sliced
1/4 Red Onion, sliced
3-4 Artichoke hears, quartered and marinated
6 Kalamata Olives (Greek Pitted Olives)
1 Tbsp Feta Cheese, crumbled
2 Tbsp Caesar Dressing (my favorite is Trader Joe’s Caesar dressing. It has a delicious flavor without all of the calories)
Optional Toppings: Croutons and/or pepperoncinis
Directions:
Wash your Romaine lettuce
Rough Chop it and put in your large bowl or plate
Slice Tomatos, add to lettuce
Slice Onion, add to lettuce and tomatos
Add Chicken, Olives, and Feta
Toss in Caesar dressing
Top with optional ingredients: croutons or pepperoncinis
ENJOY!!!!
This is a great spring and summer salad. It is super easy, tasty, and nutritious! You can play around with it and add your favorite ingredients like cucumbers or bell peppers. Have a great day empresses and enjoy some sunshine!
