This Crockpot Southwest Chicken is one of our family’s favorite crockpot meals, because of its ease, simplicity and the delicious flavor that the taco seasoning, cream cheese, beans and corn create. It is creamy, hearty, and just enough spice for it to still be kid friendly!
I love the dump all the ingredients in type of recipes that are super simple, yet create the most amazing dishes. This is one neither Fred and I ever get tired of and is a solid 10.
Just simply start by seasoning your chicken breasts with a taco packet. Add in one can of black beans, one can of corn, and cream cheese at the end for a rich creaminess. We love to eat it just as it is, or as a filling for burritos or served over rice.
For a healthy alternative, or if you have leftovers, it is wonderful served on top of a bed of lettuce for a delicious salad. I love to add a lot of salsa for the dressing, but ranch or southwest ranch would be really yummy and add some flair, too!
No matter how you choose to eat it, this one is a simple and easy weeknight meal that everyone will love!

Crockpot Southwest Chicken
Ingredients
- 3-4 chicken breasts
- 1 packet taco seasoning
- 1 can black beans drained
- 1 can corn drained
- 1 8 oz low fat cream cheese
Instructions

Place chicken in crockpot and sprinkle packet of taco seasoning over chicken.

Add drained black beans and corn.

Place cream cheese block on top.

Cook on high for 4-6 hours or low 8-10 hours.

Serve as a naked burrito bowl with rice, as taco or burrito filling or on lettuce for a salad.
Optional garnishes

Guacamole or avocado, shredded cheese, sour cream or non-fat Greek yogurt

March 12, 2015 at 5:51 pmI just made the Southwest Chicken for dinner tonight and it was a hit! I served it over corn tortilla chips and topped it with cheddar cheese, lettuce, tomatoes and Avaado. My hubby kept making the mmm…mmm sound all during dinner! Thanks Kim!!!
