This Crockpot Salsa Chicken in the Express Crock can be made two ways. A healthy version with just two to three ingredients or jazzed up with only a few more!
The healthy version is just chicken and salsa! If you want to add a taco seasoning packet or even a Ranch packet for even more flavor feel free to do so. I don’t always, but when I do I am loving this Organic Gluten-Free McCormick. For a creamier version, just simply add some corn, black beans and cream cheese that makes this dish even more delicious.
I like to use the Neufchâtel cream cheese, but regular Philadelphia is great, too! Both are creamy and delicious, but the difference is that Neufchâtel is 1/3 less fat with slightly lesser calories.

It is Crock-Pot® brands version of the Instant Pot that allows you to cook just like your used to on slow cooker mode, but it also has a pressure cooker ability for those times you need dinner fast! It’s a two in one appliance that barely leaves my countertop anymore!
This crockpot salsa chicken can be made on slow cooker or pressure cooker mode with minimal effort. An easy meal that will certainly be on your weekly rotation! I make it both ways, sometimes twice a week and love to store the healthy version in meal prep containers with a veggie like cauliflower rice for a quick on-the-go meal! How to Make Crockpot Salsa Chicken
Crockpot Salsa Chicken in the Express Crock
- 1-2 lbs. chicken breasts
- 1 jar salsa
- 1 envelope taco seasoning optional
- 1 can corn, drained optional
- 1 can black beans, rinsed and drained optional
- 1 8 oz. block cream cheese optional
Slow Cooker Mode:
Place chicken in crockpot and cover with all ingredients you are using (including cream cheese). Cover and cook on low for 6-8 hours or on high for 3-4. Shred and serve.
Pressure Cooker Mode:
Place chicken in pot and cover with all ingredients EXCEPT cream cheese. Place lid on lock, turn the valve to no venting, press the Poultry button and cook for 15 minutes. Do an immediate release. Remove lid, add cream cheese and place lid back on for 5-10 minutes until cream cheese is melted. Stir until well combined and serve.
