Crockpot Express Pressure Cooker Instant Pot Chili

This Chili recipe is one of my first posts that I ever did when starting this blog. Gosh, I look back and see how novice I was starting out in this little space of the internet! Now that I have become a bit of a better blogger, and gotten my feet wet with a new Crock-Pot Express Multi Cooker, I have updated it so that you can see how to also make Crockpot or Pressure Cooker Chili!

Over the years I’ve even brushed up on my photography and video skills to bring you actual pictures and a tutorial on how to use my new favorite Crock-Pot Multi-Cooker!!! 

My dad is quite the chef and has a repertoire of delicious dishes that he has spent quite some time perfecting. One of my absolute favorites, along with family and friends is this chili. When I first wrote this post, I asked him to give it a name and he titled it ‘Round Rock Chili’. I asked him why, because it was so random…to me!

If you know the great chili debate it really makes no sense, because this is not Texas style, meaning it DOES have beans. It is not your typical Chili Con Carne recipe, because it only has ground beef and no brisket, roast or bacon. It does have an optional Anaheim pepper and some beer. Oh, and we moved to Atlanta from Dallas, so we have a little bit of clout to give us some cred to name it this. LOL. Crockpot Express Pressure Cooker Instant Pot Chili Crockpot EmpireWe lived in Dallas before relocating to Atlanta and Round Rock is the sports capital of Texas, so it just made sense to give it this name! It even has a half of a beer as an ingredient to make it even more manly! Don’t worry, there are plenty of options to substitute, like Zing Zing Bloody Mary Mix or Beef Broth, if you don’t want to cook with alcohol, but it does add quite a nice flavor depth.

This chili is so good that it even earned me a ribbon in my former office’s Annual Chili Cook-off! Enter this into your next chili cook off and be sure to tag us if you place, because it’s a winner! From our family to your’s we hope you love it as much as we do!

Crockpot or Pressure Cooker Chili

Ingredients
  1. 1 lb. ground beef or turkey
  2. 1 onion
  3. 1 bell pepper
  4. 1 teaspoon cumin
  5. 1 teaspoon garlic powder
  6. 1 teaspoon cilantro
  7. 1 teaspoon paprika
  8. 4 teaspoons chili powder
  9. 1 can Original Rotel
  10. 1 can tomato sauce
  11. 1 can black beans, drained
  12. 1 can kidney beans, drained
  13. 1 cup beer, lager or pale ale (can substitute Zing Zing Bloody Mary Mix or beef broth)
Optional for more heat
  1. One Anaheim pepper, chopped
Optional Toppings
  1. Few dashes of Franks Hot Sauce, shredded cheese, sour cream, avocado, jalapeños
Crockpot
  1. On stovetop over medium heat, brown ground beef.
  2. Once meat is halfway done add chopped onion and bell pepper and cook until onions are translucent and meat is browned through.
  3. Drain excess grease from pan.
  4. Add cumin, garlic powder, cilantro, paprika and chili powder to meat mixture and stir.
  5. Add Rotel, tomato sauce, black beans, kidney beans and beer and stir.
  6. Put on lid and set to High for 3-4 hours or Low 6-8 hours.
Pressure Cooker
  1. Turn on Crockpot Express to sauté mode.
  2. Add olive oil and add meat to pot.
  3. Once meat is halfway done add chopped onion and bell pepper.
  4. Brown meat through and drain excess grease from pan.
  5. Turn off sauté mode.
  6. Add cumin, garlic powder, cilantro, paprika and chili powder to meat mixture and stir.
  7. Add Rotel, tomato sauce, black beans, kidney beans and beer and stir.
  8. Make sure steam release valve is set to pressure in the closed position.
  9. Lock lid, press beans/chili button and start button.
  10. Once the timer goes off do a quick pressure release by opening the steam release valve.
  11. Open lid and serve.
