As we all quarantine, cooking at home has become a necessity. I am cooking lots of my favorite crockpot meals like the best BBQ Chicken, Salsa Chicken and one of Fred’s other favorites A1 Pot Roast that is in the crock now! These are awesome, because they are so easy with minimal ingredients and are absolutely delicious. I’m also experimenting with so many new recipes, because we just can’t eat the same thing over and over.

How to make Crockpot Crack Chicken

These are the ingredients you will need:

  • Chicken Breasts
  • Dry Envelope Hidden Valley Ranch
  • Block of Cream Cheese
  • Shredded Sharp Cheddar Cheese
  • Bacon
  • Chicken Broth (only if you are cooking on pressure cooker mode)

What is “Crack” Chicken?

This recipe is all over the internet, and I’m a little embarrassed that it’s taken me this long to make it. What a huge mistake!!! Fred called me a “mean woman” for not making it until now! I guess it was the name that made me shy away for so long, but the name and reputation precedes itself. We’ve made it three times since we’ve been in quarantine. And, it’s on the menu again next week!We officially have a crack chicken addiction now!

This is Keto friendly and is great alone or on a bed of lettuce. If you feel like some carbs, put some on buttery crackers or load it on a baked potato. I’m getting hungry just thinking about it! Exactly why it’s name is CRACK chicken! You can also leave the chicken out and make it Crack Dip for an appetizer!

Tip: to shred the chicken you can use two forks or my favorite tool these bear paws!

Crockpot Crack Chicken in the Express Crock

Ingredients

  • 2-3 chicken breasts
  • 1 (1 oz) dry envelope packet Hidden Valley Ranch
  • 1 (8 oz) block cream cheese
  • 1 (2 cups) package shredded sharp cheddar cheese
  • 1 (16 oz) package bacon, cooked and crumbled
  • 1/2 cup chicken broth **Express Crock only**

Instructions

Pressure Cooker Mode:

  1. Place chicken in crockpot and season with salt and pepper.

  2. Add 1/2 cup chicken broth.

  3. Sprinkle ranch mix over chicken and place cream cheese on top.

  4. Place lid on lock, set valve to sealing. Press the poultry button and cook for 15 minutes. Do a natural release for 5 minutes and release valve to let out any additional steam.

  5. Shred chicken and stir to combine with cream cheese. Add shredded cheese and stir until melted and well combined.

  6. Add crumbled bacon, stir and serve.

Slow Cooker Mode:

  1. Place chicken in crockpot and season with salt and pepper.

  2. Sprinkle ranch mix over chicken and place cream cheese on top.

  3. Cover and cook on low for 6-7 hours or high for 3-4.

  4. Shred chicken and stir to combine with cream cheese. Add shredded cheese and bacon, stir and cover until melted and well combined.
