My mother-in-law is a southern queen in my eyes that can whip up anything from scratch using the recipes that she carries in her head. One of the dishes that I remember having on one of my first visits to her home was her homemade chicken n’ dumplings and boy, did they leave a lasting impression on me!
They were not how I remembered chicken n’ dumplings to taste, and there was something so unique about them. Last winter, I emailed her asking for her recipe and when she sent it and I read it I realized what was so different. She uses tortillas instead of dough or biscuits!
I wanted to take her recipe and re-create it for the crockpot and this version turned out amazing and did not dissappoint! It is so easy and a comfort food that is filled with flavor! I hope you love it just as much as Fred and I did! Crockpot Southern-Style Chicken n‘ Dumplings
Serves: 4-6
Prep Time: 15 minutes
Ingredients:
3-4 chicken breasts
1 bag of soft taco or fajita tortillas
- Note: I used both white flour tortillas and 100% whole wheat for testing purposes and both turned out great.
1 can of Cream of Celery soup
1 can Chicken broth
1 chicken bouillon cube
Pepper, to taste
Directions:
Place chicken in crockpot and cover with both soups
Place chicken bouillon cube on top
Cook on low 6-8 hours or on high 4-6 hours
30 minutes to one hour prior to eating:
Using a pizza cutter, cut tortillas in 2-3 inch strips and then in halves.
Place tortilla strips into crockpot. Using a utensil push them down to the bottom covering each piece in the juices.
Let simmer for 30 minutes to an hour until soft.
Enjoy!
This is the perfect meal for all of the rain we are having here in Atlanta and for the cooler months ahead. Since this was the first time making this new creation of mine, I am excited to experiment again by making it even more homemade. Next time, I am going to use a whole fryer chicken, extra broth, and omit the Cream of Celery. Can’t wait to share how it turns out!
