Crockpot BBQ Cheeseburger Meatloaf
This time of year becomes hectic when sports and extra-curricular activities begin and many readers have asked me for some new crockpot recipes to help lessen the back-to-school chaos. I recently created this Crockpot BBQ Cheeseburger Meatloaf and it was an instant hit and has become a go to in my crockpot recipe arsenal!
I hope you had a great summer and your transition back into the school year has been a smooth one! It’s been nice to get back into a routine and focus on blogging again, but the sentimental part of me just wants to be with Knox enjoying this time I have with him as long as I can. I’ve heard “they just grow up so fast” since he was a baby, and each year continues to feel like it gets faster and faster. To have a 7-year-old just seems mind blowing to me and makes me want to just freeze frame the most precious moments. Sorry to get all sappy there. Shall we move on to the really important stuff like what to feed the family?!
The word meatloaf has never been a hit with Fred. He didn’t grow up eating it and to him the idea of meat formed into a loaf has never been appealing. Add in the fact that he despises Ketchup and would rather do some really nasty things in place of ever having to eat it, made my case of convincing him how yummy it could be all the more improbable. We like to play the game ‘Would You Rather’ and a lot of times I ask, “would you rather eat ketchup or {insert gross action here}! If you and your family or friends don’t play this game on a regular basis I highly encourage it for some easy entertainment!
If you know me well than you know I can be very stubborn and don’t give up on things very easily, so even though it took years I finally convinced him to try my meatloaf. I knew the first time I made it would have to be a different spin on the typical meatloaf and ketchup smothered on top would send him running to his truck and driving straight to the Chick-Fil-A drive thru for dinner! I wasn’t going to let that happen, because you know I’m stubborn like that!
I found this amazing recipe for Crockpot BBQ Cheeseburger Meatloaf and knew it had to taste just like a cheeseburger without the bun. And what man doesn’t love bbq or a cheeseburger? So, I pulled out my trusty crockpot and that’s where the magic happened. A meatloaf full of gooey cheese, loaded with pieces of bacon and topped with bbq sauce for the WIN. Never will he turn down meatloaf again and never will he suspect the next time I make a different version that it may or may not have ketchup in it!!!

Crockpot BBQ Cheeseburger Meatloaf
Ingredients
- 1 lb. ground beef
- 1 egg lightly beaten
- 1 cup BBQ sauce divided use
- 1/2 package bacon cooked and crumbled
- 1 cup shredded cheddar cheese mild or sharp
- 1/2 cup Panko or seasoned bread crumbs
- 1/2 cup green bell pepper chopped (optional)
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions

Cook bacon and crumble

With hands gently mix and fold in together ground beef, egg, 1/2 cup BBQ sauce, cooked bacon, cheese, bread crumbs, bell pepper, onion powder, salt and pepper until well combined

Shape mixture into a rectangular loaf that won't touch the side of your crockpot

Spray crockpot with non-stick cooking spray

Place loaf in crockpot

Top with remaining BBQ sauce

Cook on low for 6 hours or high for 3 hours

For a gluten-free version, make sure to use Gluten Free bread crumbs and bbq sauce
