I don’t know who loves Christmas morning more; my kids or me! They are so excited to unwrap and tear into all their presents and I am just as excited to see them do it!  I love the joy and anticipation in their sweet little faces, and the last thing I want to be doing is cooking! This Christmas Morning Casserole helps to sit back and soak it all in, while enjoying a yummy breakfast!

A few years ago, I came up with a super simple (and not so healthy) Christmas Morning Casserole. This casserole is everything you would want on Christmas morning, without having to work in the kitchen all day! It combines, eggs, sausage, cheese, and biscuits. Yes, Yes, YES! 

I assemble the casserole the night before, cover with tinfoil and refrigerate. If you put it in the oven (no need to pre-heat) right after you wake up, (like when you are getting your first cup of coffee!) it will probably be ready just after the last present has been opened and the kids are finally ready to stop for five minutes and eat.

Next, Pour the cooked sausage over the biscuits.

Pour eggs over biscuits and sausage.

*TIP: after the egg puffs up, it will settle down once it is cooling.

Allow to cool for 10 minutes and serve.

An added bonus to this recipe is that your house will smell amazing! If there are any leftovers, store them in an airtight container for up to two days. Enjoy and Merry Christmas!
