Fall is here! It is cool and rainy outside and all I want is comfort food!! So what is a carb conscious girl to do? Have a pot roast from the crockpot of course with some yummy cauliflower mash!
If you have not tried this amazing side you absolutely have to! It is the perfect substitute for good old fashion mashed potatoes, but with almost zero carbs and tons of health benefits thanks to the perfectly paired ingredients.
You will need:
1 – 12 ounce bag fresh cauliflower
Cauliflower is an excellent source of vitamin C, vitamin K, folate, pantothenic acid, and vitamin B6. It is a very good source of choline, dietary fiber, omega-3 fatty acids, manganese, phosphorus, and biotin. Additionally, it is a good source of vitamin B2, protein, vitamin B1, niacin, and magnesium. Cauliflower Nutrition Info
1/2 cup plain greek yogurt
Greek yogurt is a great source of protein. It has 2x’s the amount of protein vs regular plain yogurt. It is also lower in carbs, roughly having half the carbs of regular yogurt. Greek Yogurt vs Regular Yogurt
1 tbsp. Kerrygold butter

Pink Salt (to taste)

Instructions:
Get your steamer pot out. Fill the bottom part with 2 inches of water. Turn the stove on med-high. Empty the cauliflower into the top part and cover with a lid.
Steam the cauliflower for 15-20 min or until soft when pressed with a fork.
Remove the top part of the steamer and drain any excess water from the cauliflower.
Pour the steamed cauliflower into a bowl.
Add yogurt and butter.
Mash with potato masher or inversion blender until blended and smooth (resembling mashed potatoes).
Add salt (and pepper-optional) to taste.
P.S. – Don’t tell them what you are serving and see if they can taste the difference!!!
